Black Bean Enchilada Quinoa Bowl (All Dump, Instant Pot)
All dump, vegetarian, and fast. Great for meal prep bowls.

- Pressure: High Pressure
- Time: 1 minute
- Release: Natural Release 10 minutes, then quick release
Instructions
- Add liquid + base. Pour broth into the pot, then add quinoa, black beans, and corn.
- Season. Sprinkle taco seasoning over the top.
- Top with sauces. Pour enchilada sauce and tomatoes on top and do not stir.
- Pressure cook. Seal and cook on High Pressure for 1 minute.
- Release. Natural release 10 minutes, then quick release.
- Finish. Fluff and stir before serving.
Note: This recipe uses only part of a 1 lb quinoa bag unless you double it.
