Black Bean Enchilada Quinoa Bowl (All Dump, Instant Pot)

Ingredients (6–8 servings)

  • Pressure: High Pressure
  • Time: 1 minute
  • Release: Natural Release 10 minutes, then quick release

Instructions

  1. Add liquid + base. Pour broth into the pot, then add quinoa, black beans, and corn.
  2. Season. Sprinkle taco seasoning over the top.
  3. Top with sauces. Pour enchilada sauce and tomatoes on top and do not stir.
  4. Pressure cook. Seal and cook on High Pressure for 1 minute.
  5. Release. Natural release 10 minutes, then quick release.
  6. Finish. Fluff and stir before serving.

Note: This recipe uses only part of a 1 lb quinoa bag unless you double it.
