Chipotle Barbacoa-Inspired Instant Pot Bowls
Copycat-inspired burrito bowl protein with whole-container salsa + chipotles.
Ingredients (4 hearty bowls)
Settings
- Pressure: High Pressure
- Time: 65 minutes
- Release: Natural release 15 minutes, then quick release
Instructions
- Layer pot. Add water and seasoning packet, then chuck roast. Top with full salsa jar and full chipotle can. Do not stir.
- Pressure cook. Seal and cook on High Pressure for 65 minutes.
- Release. Natural release for 15 minutes, then quick release remaining pressure.
- Shred + finish. Shred beef in the pot, stir in full can of black beans, and Sauté 3–5 minutes until beans are hot.
- Serve. Heat rice pouches and spoon barbacoa over rice.
Heat note: using the full chipotle can makes this spicy.
