Chipotle Chicken-Inspired Instant Pot Bowls

Copycat-inspired bowl recipe with no-prep layering and a full can of chipotles.

Ingredients (4 bowls)

Settings

  • Pressure: High Pressure
  • Time: 12 minutes
  • Release: Natural release 5 minutes, then quick release

Instructions

  1. Layer pot. Add water, chicken thighs, seasoning packet, full salsa jar, and full chipotle can. Do not stir.
  2. Pressure cook. Seal and cook on High Pressure for 12 minutes.
  3. Release. Rest 5 minutes, then quick release.
  4. Finish. Shred or chop chicken in pot, stir in whole frozen corn bag, and Sauté 3–5 minutes until hot.
  5. Serve. Heat rice pouches and top with chicken mixture.

Heat note: this is fairly spicy with the full chipotle can.
