Chipotle Chicken-Inspired Instant Pot Bowls
Copycat-inspired bowl recipe with no-prep layering and a full can of chipotles.

Settings
- Pressure: High Pressure
- Time: 12 minutes
- Release: Natural release 5 minutes, then quick release
Instructions
- Layer pot. Add water, chicken thighs, seasoning packet, full salsa jar, and full chipotle can. Do not stir.
- Pressure cook. Seal and cook on High Pressure for 12 minutes.
- Release. Rest 5 minutes, then quick release.
- Finish. Shred or chop chicken in pot, stir in whole frozen corn bag, and Sauté 3–5 minutes until hot.
- Serve. Heat rice pouches and top with chicken mixture.
Heat note: this is fairly spicy with the full chipotle can.
