Homemade Beef Shawarma/Döner Wraps with Roasted Garlic Tzatziki
Thin-rolled seasoned beef bakes with whole tomatoes and garlic, then gets wrapped with roasted garlic tzatziki and crisp onions.

Instructions
- Heat the oven. Preheat oven to 200°C / 392°F.
- Season the beef. In a bowl, mix the ground beef with paprika, chili powder, black pepper, garlic powder, and salt just until combined.
- Roll the beef thin. Place the beef on parchment paper. Cover with another sheet and roll into a thin, even rectangle.
- Form a meat log. Remove the top parchment. Use the bottom parchment to roll the beef tightly into a log, like a jelly roll.
- Prepare the garlic and tomatoes. Place the beef roll on a baking sheet. Add whole tomatoes and whole garlic heads to the tray. Slice tops off garlic heads if desired and drizzle garlic with olive oil.
- Bake. Bake for 40 minutes, until beef is cooked through and tomatoes and garlic are soft.
- Cool slightly. Let everything cool for about 15 minutes so the beef firms up and the tomatoes are easier to handle.
- Make the roasted garlic tzatziki. Squeeze roasted garlic cloves from their skins into a bowl. Mash, then mix with Greek yogurt, grated cucumber, mint, dill, olive oil, lemon juice, salt, and pepper until smooth.
- Prepare the beef pieces. Remove the beef from parchment and tear or slice into small strips.
- Peel the roasted tomatoes. Slip off the skins, then roughly chop or crush the tomatoes.
- Assemble the wraps. Spread tzatziki over each flatbread. Add beef, roasted tomatoes, sliced red onion, and any optional cucumber or herbs.
- Roll and toast. Roll wraps tightly. Toast seam-side down in a dry skillet over medium heat for 1–2 minutes per side until lightly crisp and warm.
Notes
- For a more shawarma-style flavor, add 1/2 tsp cumin and 1/2 tsp coriander to the seasoned beef.
- For a saucier wrap, add extra tzatziki before rolling or serve extra on the side for dipping.
