Instant Pot French Onion Soup (No Board Version)

Buy

Pressure settings

  • Step 2: High Pressure 5 minutes + quick release
  • Step 4: High Pressure 3 minutes + quick release
  • Sauté phases: 5 minutes, then 15–25 minutes

Into the pot

  • Butter
  • All onions
  • 1 tsp salt
  • Some black pepper

Steps

  1. Step 1: Use Sauté for about 5 minutes, stirring now and then, until the onions start collapsing.
  2. Step 2: Lock lid and pressure cook on High for 5 minutes, then quick release.
  3. Step 3: Open it back up and use Sauté again for 15–25 minutes, stirring occasionally, until the onions get deep golden and jammy.
  4. Step 4: Pour in beef broth and consommé, scrape the bottom well, then pressure cook on High for 3 minutes and quick release.

Finish

Ladle into bowls and top with croutons and shredded cheese.

If your bowls are oven-safe, broil them. If not, just cover the bowls or the pot for a few minutes so the cheese softens and melts.
