Jans Ube Soft Serve
Purple yam soft serve with hydrated Jans ube powder, vanilla, and sweetened condensed milk.
Ingredients
Timing & equipment
- Yield: about 4 cups
- Equipment: Cuisinart 6 in 1 and a blender
- Chill: ideally 4 hours or overnight
- Setting: Ice Cream / soft serve
Instructions
- Hydrate the ube. Warm 4 tbsp of the measured whole milk and stir it into the ube powder until you have a smooth purple paste.
- Blend. Blend the paste with the remaining milk, cream, condensed milk, vanilla, salt, and optional sugar for about 30 seconds.
- Chill. Refrigerate until thoroughly cold, ideally 4 hours or overnight.
- Make the soft serve. Run the chilled base on the Cuisinart’s Ice Cream / soft-serve setting.
- Serve. Dispense first, then add fresh blueberries and a very small drizzle of condensed milk if desired. Do not put whole blueberries into the machine.
Notes & variations
- Ube is purple yam, a different ingredient from taro. This version has a brighter purple color and a sweet, vanilla-like, nutty flavor.
- Hydrating the powder before blending helps avoid a grainy base.
