"Mississippi" Pot Roast (Instant Pot)

Settings

  • Pressure: High Pressure
  • Time: 70 minutes
  • Release: Natural Release 15–20 minutes, then quick release

Instructions

  1. Load the pot. Place the chuck roast in the inner pot.
  2. Season. Sprinkle ranch seasoning and au jus mix evenly over the roast.
  3. Add pepperoncini. Pour the entire jar of pepperoncini and brine over top. Add butter if using.
  4. Pressure cook. Seal and cook on High Pressure for 70 minutes.
  5. Release. Natural release 15–20 minutes, then quick release remaining pressure.
  6. Finish. Shred or slice and stir the liquid into a gravy-like sauce.

Serving ideas: Mashed potatoes, rice, egg noodles, or sandwiches.
