No-Soak Salsa Black Beans (Instant Pot)

Use a full jar of salsa, add salt after cooking, and let the beans thicken as they rest.

Ingredients (10–12 servings)

Settings

  • Pressure: High Pressure
  • Time: 45 minutes
  • Release: Natural Release 20 minutes, then quick release

Instructions

  1. Add water + beans. Pour water into the inner pot, then add rinsed beans.
  2. Top with salsa. Pour salsa over the top. Do not stir thick salsa into the bottom.
  3. Pressure cook. Seal and cook on High Pressure for 45 minutes.
  4. Release. Natural release 20 minutes, then quick release remaining pressure.
  5. Season. Stir, then salt to taste. Let sit 10 minutes to thicken slightly.

Serving ideas: Burrito bowls, tacos, tostadas, bean-and-cheese quesadillas.
