No-Soak Salsa Black Beans (Instant Pot)
Use a full jar of salsa, add salt after cooking, and let the beans thicken as they rest.

- Pressure: High Pressure
- Time: 45 minutes
- Release: Natural Release 20 minutes, then quick release
Instructions
- Add water + beans. Pour water into the inner pot, then add rinsed beans.
- Top with salsa. Pour salsa over the top. Do not stir thick salsa into the bottom.
- Pressure cook. Seal and cook on High Pressure for 45 minutes.
- Release. Natural release 20 minutes, then quick release remaining pressure.
- Season. Stir, then salt to taste. Let sit 10 minutes to thicken slightly.
Serving ideas: Burrito bowls, tacos, tostadas, bean-and-cheese quesadillas.
