Qdoba-Style Pulled Pork Instant Pot Bowls

Copycat-inspired burrito bowl filling built for open, pour, and pressure cook.

Ingredients (4 bowls)

Settings

  • Pressure: High Pressure
  • Time: 60 minutes
  • Release: Natural release 15 minutes, then quick release

Instructions

  1. Layer pot. Add water and taco seasoning, then pork shoulder. Top with full salsa verde jar and full green chile can. Do not stir.
  2. Pressure cook. Seal and cook on High Pressure for 60 minutes.
  3. Release. Natural release 15 minutes, then quick release remaining pressure.
  4. Finish. Shred pork in pot, stir in full pinto bean can, and Sauté 3–5 minutes until hot and slightly thickened.
  5. Serve. Heat rice pouches and top with pulled pork mixture.
