Salsa Barbacoa-Style Beef (Instant Pot)
Dump, pressure cook, shred. Keep the salsa on top to avoid burn warnings.

- Pressure: High Pressure
- Time: 70 minutes
- Release: Natural Release 15–20 minutes, then quick release
Instructions
- Add beef. Place chuck roast chunks in the inner pot.
- Layer sauce. Pour salsa over the meat, then add the full can of chiles. Do not stir thick salsa into the bottom.
- Pressure cook. Seal and cook on High Pressure for 70 minutes.
- Release. Natural release 15–20 minutes, then quick release remaining pressure.
- Shred. Shred beef and stir into the sauce. Taste and salt if needed.
