Salsa Barbacoa-Style Beef (Instant Pot)

Dump, pressure cook, shred. Keep the salsa on top to avoid burn warnings.

Ingredients (6–8 servings)

  • Pressure: High Pressure
  • Time: 70 minutes
  • Release: Natural Release 15–20 minutes, then quick release

Instructions

  1. Add beef. Place chuck roast chunks in the inner pot.
  2. Layer sauce. Pour salsa over the meat, then add the full can of chiles. Do not stir thick salsa into the bottom.
  3. Pressure cook. Seal and cook on High Pressure for 70 minutes.
  4. Release. Natural release 15–20 minutes, then quick release remaining pressure.
  5. Shred. Shred beef and stir into the sauce. Taste and salt if needed.

Serving ideas: Tacos, burrito bowls, nachos, quesadillas.
