Salsa Verde Carnitas (Instant Pot)

Settings

  • Pressure: High Pressure
  • Time: 60 minutes
  • Release: Natural Release 15 minutes, then quick release

Instructions

  1. Season. Sprinkle salt over the pork chunks.
  2. Load the pot. Pour salsa verde into the inner pot and nestle the pork in the sauce.
  3. Pressure cook. Seal and cook on High Pressure for 60 minutes.
  4. Release. Natural release 15 minutes, then quick release remaining pressure.
  5. Shred. Shred pork with two forks and stir into the juices.

Optional crisp: Spread shredded pork on a sheet pan, spoon a little cooking liquid over top, and broil 3–5 minutes until browned.

Serving ideas: Tacos, burrito bowls, nachos, quesadillas.
