Taco Soup (Whole Cans/Jars, Instant Pot)

Use whole cans and jars, pour broth in first, and stir lightly before pressure cooking.

  • Pressure: High Pressure
  • Time: 7 minutes
  • Release: Natural Release 5 minutes, then quick release

Instructions

  1. Start with broth. Pour broth or water into the inner pot first.
  2. Add the rest. Add salsa, tomatoes, corn, beans, and taco seasoning. Stir lightly (avoid scraping thick salsa across the bottom).
  3. Pressure cook. Seal and cook on High Pressure for 7 minutes.
  4. Release. Natural release 5 minutes, then quick release remaining pressure.
  5. Serve. Stir and serve.

Toppings: Crushed tortilla chips, cheese, sour cream, avocado, cilantro.
